Four of the Healthiest Veggies You Can Eat This Winter

Now that winter’s officially here, we wanted to take the opportunity to talk about four winter vegetables that are amazingly delicious and nutritious!  Many people gain weight in the wintertime due to inactivity and high-calorie, high-fat “comfort foods.”  But by incorporating more produce in your diet, you can avoid unwanted weight gain, boost your immune system and give your body the nutrients it needs to stay healthy!

Here are four of the healthiest vegetables that are in season now.

1) Kale.

Kale is one of the most nutritionally-dense vegetables on the planet!  In one 33-calorie cup of this deep green vegetable, you’ll find 206% of your Recommended Dietary Amount (RDA) of Vitamin A, 684% of your Vitamin K, and 134% of your Vitamin C!   Calorie for calorie, kale has almost as much iron as red meat, and its high antioxidant content has been shown to reduce the incidence of inflammation, cancer and high blood pressure.   Whether you eat it in a salad, add it to a stew or blend it into your smoothie, kale will do your body lots of good.

2)  Cauliflower.

One of cauliflower’s most popular features is its ability to substitute as a low-carb alternative to high-carb foods like potatoes and rice.  In fact, cauliflower rice has become so popular the past few years, many grocery stores have had a hard time keeping up with the demand!  But in addition to being a starch substitute, cauliflower is also one of the healthiest winter vegetables you can eat because it contains lots of Vitamin C, as well as a compound called sulforaphane that’s been shown to kill cancer cells and slow tumor growth.

3)  Avocados.

OK, technically avocados are a fruit.  But since they’re often incorporated into savory recipes (guacamole, anyone?) , we snuck them onto the list.  Avocados are California’s hometown hero, since 90% of North America’s avocados are grown in our state!  They’re usually harvested from September through December, which means there’s an abundant supply of them during the winter season.  Avocados contain more potassium than bananas!  Add in their healthy monounsaturated fats that improve your heart health and reduce inflammation and it’s clear why they’re such a healthy winter option.

4)   Turnip Greens.

Turnip greens join kale, broccoli and brussel sprouts as members of the cruciferous family.  These inexpensive, versatile leaves offer lots of Vitamin K, Vitamin A, Vitamin E, calcium, folate and fiber.  Turnip greens also contain manganese, a mineral that helps your body produce connective tissue, bone cells and sex hormones.  They can be eaten on their own, or added to nourishing winter soups and stews.  Just be careful not to overcook your greens, since the nutritional value drops significantly if they’re stewed for too long.
